
Thinking outside the (cookie) box
When I think back on my childhood in the inner city of Philadelphia, I can still hear the distinct sound of a ball hitting the side of the house and the joyful laughter of my sisters and brother playing with the kids in the neighborhood. Their mission was always clear and very consistent--play until you drop. I, on the other hand, had something else in mind. I was determined to become the World's Greatest Sous-Chef—it didn't matter that I was only four years old!
Assisting none other than Chef Mommy, I would set up my Betty Crocker Easy Bake Oven® next to Mom and go through the list of ingredients for our nightly meal... Corn on the cob—check, tomatoes—check, chicken—check, rice—check. The two of us were ready to create a wholesome meal that would bring our family together in just a few hours. Mom would cut the corn off the cob, delicately dice the tomatoes and chop the fresh okra. It was my job to blend it all together in the bowl so Mom could prepare the perfect succotash.
While Mom worked on the rest of the meal, I would prepare the dessert in my own little oven. One pack of chocolate cake mix and water is what the recipe called for. It should have been simple. Just mix, stir, pour it in a pan and watch it through the little window as the light bulb magically cooked the cake. But following the directions on the box was not good enough for me—I just had to add my own twist with canned cherries, and a dash of cinnamon. My brother and sisters would run in the house ravished from playing, waiting to see what Mommy and I had prepared. We would sit, eat and laugh. What a time we had and most of all, what wonderful memories we still hold.
Today that toy oven is somewhere in Mom’s attic, but that little girl’s creative spirit and desire to bake one-of-a-kind delicious treats is alive and well!
Organic meets Gourmet
Although I never made the cover of Bon Appétit before my fifth birthday, I did develop a love for cooking, baking and the gourmet side of life. As I grew older, I began to experiment with a variety of unique taste combinations. I discovered that vegetables, long a staple in gourmet cooking all over the world, were curiously missing in the world of desserts, especially my favorite sweet treat—the cookie! I decided to change the status quo.
In 2005, I began to bake my now famous Sweet Potato Drop cookies. They were a hit with friends, family and just about everyone who tasted them. The nagging from my friends (and their friends) for more and more of my “vegetable cookies” finally convinced me that it was time to take baking more seriously and go full time with the concept. Veggielicious Cookies and Cakes, Incorporated was born!
I created Veggielicious Cookies and Cakes and made a conscious decision and a commitment to myself to never compromise on taste and quality. I searched and found great sources of locally grown organic vegetables and fruits which today go into all of our products. What I found was that organic, all natural cookies can indeed taste deliciously gourmet. You could actually have your cake…and eat it too!
